I'm a little fuzzy on potions, I'm simply not sure what the caster level is by default on most potions.

Particularly potions that have some sort of duration based on caster level. Take levitate or invisibility potions for example, what would the caster level be?

Is it always equal to the spell level, or is it a little more? I can understand if a certain NPC created the potions, that the caster level might change but that's a different story.

By default, it's equal to the minimum caster level needed to cast the spell. So, for example, the default for invisibility is 3. The default for cure light wounds is 1.

You can brew your own potions at a higher caster level, but they'll cost more. Often that increased cost is not worth the increased price.

For Example:

Potion of Cure Light Wounds
Caster Level: 1
Effect: Cures 1d8+1 damage
Cost: 50g

Potion of Cure Light Wounds
Caster Level: 2
Effect: Cures 1d8+2 damage
Cost: 100g

For most effects it is better to make something at the minimum caster level.
