If I were to say shapechange into a titan and cast a spell such as Prismatic Sphere would the size of the sphere be larger than a medium sized creature's spell?

If I had to make an on the spot ruling, no, it wouldn't be larger. But frankly, I have no idea what the rules say on this. It's a question of whether you base the spell on any one square you're in, or all of them. Generally, you choose one. Besides, it's not nearly the same power of spell.
Same with Telekinesis, you won't get a Size bonus to checks with your mind.

I agree with that "No" answer.

Instead your body would be mostly outside of the sphere.

Well TK is a bad example, it specifically states the weight considerations in the spell description. The class of spells I would like to try this trick with would be ones that form a radius around the caster.

In the sense of power levels I can see your point. As an issue with game mechanics it seems feasible. The Prismatic Sphere spell as written does not gain significant power from a size increase on its own. I mean a 10' radius vs. a 100' radius of completely protected space is not game breaking. You can bypass or destroy it as a normal sphere; it just has the capability of protecting more area.

This trick would work for an anti-magic aura or any personal emanation spell would it not?

Your assertion that extending the area is not gamebreaking is true, but that does not mean there is no intrinsic value associated with extending the area.

That is why enlarged spells use up higher spell slots.
