Is there any way to change the type of increase from various spells? such as changing the bonus from the shield spell to, say, an insight bonus or something like that?

Edit: Also, is there any way to get the shield spell to stack with the Divine Shield feat from Complete Warrior?

Yes, research a new spell, otherwise no.

If the feat grants a shield bonus, and the spell grants a shield bonus, take the highest, and ditch the lowest.

D&D is all about balance, and allowing a player to stack any ol' bonus is going to be game breaking quickly. It's not as much fun as you would think to have an AC of 100. There's no challenge in combat. Also, a friendly high level wiz/sorc can just cast a disjunction on you and you'll lose all your fancy magic items. Then he'll proceed to kill you.

There is an Artificer infusion that allows you to change the bonus type on a magic item.
