The Spell Compendium says that it has domains meant to supplement the ones in the PHB, but it does not say what Gods have those Domains. Is it safe to assume that both the Dwarf and Metal domains can be taken by a cleric of Moradin?

Take a careful look at what the god's interests are and you will find the answer. In your example, I'd say it fits in with Moradin, so yes. In the end, however, that's something you and your DM will have to go over.

Agreed.
It is up to the DM, but dwarf, in particular, is a no-brainer in this case.
The FRCS had new domains in it, and each diety was given their domains, some of which were the new ones. I am sure that Moradin had it in the FRCS, and that is probably the source of many of those new domains, though I do not have the book so I can't be sure.

According to PGTF, a cleric of moradin can take the dwarf domain but not the metal domain(It's not one of moradin's offered domains).:)
