as of late I have been trying to come up with a spell that would summon a floating coffin. the purpose of the coffin is shelter, transportation, and an improvised weapon. Im trying to think of what material it could be made of so its durable but light enough to siwng. Im guessing it would last 3 hours and deal 1d6 bludgeoning and possiably 1d4 extra cold. the coffin has no other properties save for floating and the cold.
Around what level would this spell be?

Lets see. The effects sound a bit like a combinaton of several low level spells.
Like
Spiritual Weapon (Clr 2)
Mount (Wiz 1)
Tensers floating disc (Wiz 1)
Leomunds Tiny hut (Brd 3 Wiz 3)

So probably at least level 4.
(And why would a coffin do cold damage?)

I'd call it third. It combines the effects of Tenser's Floating Disk and a Flaming Sphere - it's a long lasting carrier and it permits extra attacks every round.

Tenser's Floating Coffin

Evocation [Cold, Force]
Level: Sor/Wiz 3
Components: V, S, M
Casting Time: 1 standard action
Range: Close (25 ft. + 5 ft./2 levels)
Effect: 7 ft. floating coffin
Duration: 1 hour/level
Saving Throw: None
Spell Resistance: No

You create a coffin-shaped ojbect of cold force that follows you about, carries loads for you, and slams into creatures. The disk a transparent black and brown coloration (or whatever colors suit the caster) and is 7 feet long, 2 feet wide, and 2 feet deep. It can hold 100 pounds of weight per caster level. (If used to transport a liquid, its capacity is 210 gallons.)

The coffin floats approximately 3 feet above the ground at all times and remains level. It can float along horizontally within spell range and will accompany you at a rate of no more than your normal speed each round. If not otherwise directed, it maintains a constant interval of 5 feet between itself and you.

You may also ride in the coffin, with floats 3 feet above the ground with a Fly Speed of 30 ft. (average) but cannot ascend or descend. If you lay down in it the coffin provides cover.

The coffin may be used as a weapon. It attacks like a slam from a medium creature with your base attack bonus and a Strength modifier equal to your
Intelligence bonus and deals 1d6 bludgeoning plus 1d4 cold damage.

The coffin can be attacked. It has a AC of 10. It is destroyed if it takes damage equal to your caster level times 10.

The coffin winks out of existence when the spell duration expires. The coffin also winks out if you move beyond range or try to take the coffin more than 3 feet away from the surface beneath it. When the coffin winks out, whatever it was supporting falls to the surface beneath it.

It's easy: Make a Leomund's Secret Chest out of a combination of Blue Ice and Rimefire Ice from Frostburn. Make it coffin-shaped. Trick it out with one of the cheap amulets from the new Magic Item's Compendium that cast Tenser's Floating Disk. There you've got it--a floating cold coffing that you can summon and dispel. All fun and legal.
