There are many spells that daze or otherwise incapacitate foes, but what exactly constitutes 'helpless'?

Hold Person, and Sleep are easy choices. But what about other spells? Facination? A Monk's stun?

Thank you all for your assistance.

Stunned, dazed, grappled, pinned, prone, or fascinated creatures are not helpless.

Sleeping, held, bound, or paralyzed creatures are helpless.

A Person is Helpless when they suffer any condition that falls under the definition of Helpless or that specifies that they become Helpless. Helpless is a defined condition in D&D so if something does not mention "helpless" or one of the defined conditions that cause it then it does not render them helpless.

Helpless: "A helpless character is paralyzed, held, bound, sleeping, unconscious, or otherwise completely at an opponent’s mercy."

So someone who is pinned, stunned or dazed is not Helpless.

Other causes are having an Ability drained to 0.

The SRD chapter on Abilities and Conditions is a good reference for this.
