Hi someone was saying that an elemental is immune to natural death, no breathing, no food, no water, no aging and no dying from these things.

Is this true and if so where does it say this?

Elementals do not need to eat, sleep, or breathe. This is in the glossary in the MM.

As for natural immortality, I have no clue.

I always thought that elementals and outsiders (not planetouched though) were immortal beings. They could still be killed in battle, but they live forever otherwise. I would make sense, since they dont eat, sleep or breathe, and it is doing these things that makes us age. Plus, I can't really see any difference between an old and young elemental, I don't think they are that well defined physically.

Elementals immortal after my opinion too.

There are different sizes of elementals, the huge one being called Elder. But I'd rather think that's advanced version, or just elementals that spawned from larger..err..things.

Like an air elemental from a strong wind might be medium, but one born from a tornado might be large, or so.

And to answer the implied part of your question, yes, when you hit transcendance as an Elemental Savant, you take on the elemental creature type, and you no longer require food, sleep, or even need to breath.

However, you still have to rest for 8 hours to get your spells back.
Rest is defined, essentially, as a time when nothing gets done. You could kick back and read a book for 8 hours, but you could not use it to study a tome needed for a quest. You could sit and watch the stars, but you couldn't be on watch.

Just because you no longer sleep doesn't mean you don't still have to have 8 hours of downtime per day for spell recovery. As for immortality, I'd say no. Treat it like a Monk's ability. You stop aging, and you keep looking young, but when your time comes, you still die.
