Three short questions concerning an awakened elephant...
1) Does the CR of the creature increase?
2) What would the level adjustment for such a creature be ( I plan to use an awakened elephant as one of the main villains in a high-level adventure...he's a necromancer....a necrophant;)).
3) Can he use his trunk to cast spells with somatic components or would he need a feat to cast spells normally?

Make it an evil Druid and take the feat Natural Spell.

No, I want him to be a pure necromancer ( since the "necrophant" thing has been a running gag with my group for some time now and I want to do it justice finally)....

Oddly, I've kind of thought of this before. Go with the vampire template. Your trample could do negative energy type level drain. Not to mention drain blood on the biggest fangs around. If you are wondering this came up over a discussion about elephant garlic.

But I digress. Ok so, 11HD. CR7. Awaken adds 2 HD. I'd say CR+3( 2 for hit dice, and 1 for the gained intellect and mind set) So CR 10. If you are the DM you shouldn't worry about the LA. If you aren't the DM this would certainly not make for a suitable character to play. Either way I think the elephant could make adequate motions with his trunk to use spells with somatic components, and wands to boot. :evillaugh Also, just as something neat that I thought of. The best way to deal with a caster is to grapple him/her maybe you could take the two feats from Savage Species that lower the penalty from grappling with one limb down from -20 to 0. That way you could silence a caster by pinning him/her and trample the rest of the mooks that dare oppose your might. Also, tell me how this one turns out. It sounds..... devious.

Savage Species has the feat you'll need: Surrogate Spellcasting. As for CR, I'd use a flat +1 for the awaken; all it does is allow adding of class levels.

Round 1: Cast initial spells, buff, etc.
Round 2: Trample melee combatants to get to the spellcasters (and gore them!)
Subsequent rounds: Ready actions to pursue spellcasters and disrupt their spells. When they're dealt with, mop up the warriors :)
