The Polymorph spell allows you to change into another creature.
But you only get size, Str, Dex, Con, Special Attacks (unless supernatural or spell-like), AC, movement (including fly, burrow, climb, swim), skill-bonuses and bonus-feats. The creatures HD must not exceed your CL (max 15).

Now, which monster should I choose in combat? It seems like Hydras are pretty amazing. Those multiple attacks must rock! And they're even usable for charge-attacks and attacks of opportunity!

What is your favorite Polymorph-beastie?

there is a thread here (http://boards1.wizards.com/showthread.php?t=175846&highlight=3+5+Polymorph+thread) that has a fairly exhaustive listing of interesting forms. Note that according to recent rules clarificaions, your equipment will resize to accomadate most new forms (dragons can wear bracers and necklaces, for example) and you DO get a HP modifier based on your new CON score. You also get many of the abilities from taking on the type and subtype of the form you take. That's one HUGE diference from 3.0

That thread, however, doesn't cover some of the stuff in MM3, Underdark, and other more recent publications. But its a good start.
