Er, not really new. One of my players made these stats based on an undead he know about in Ravenloft. I liked the idea so much, I asked him to make 3.5 stats. Probably has some errors, but its pretty cool :dancin:

Undead Template
When the proper spells are cast on a corpse to create a skeleton, an additional step (essentially casting Animate Dead again) can be taken to seperate the skeleton from the rest of the body and create both a skeleton and a creature called a boneless.
The boneless are among the most disturbing of undead, since they can move and fight while slithering and flopping about on the ground. Boneless often appear much the same as zombies do, but without a skeleton inside. They flopabout in a prone position and usually wait in ambush to attack. Unlike skeletons and zombies, boneless possess enough intelligence to make use of their abilities and limits, but they are still essentially mindless and instructions need to be given in much the same manner as with a skeleton or zombie.
Creating a Boneless
"Boneless" is a template that can be applied to any corporeal creature (except undead) that has a skeletal structure (which it will soon lack). This creature is referred to hereafter as the base creature.
Size and Type: The creature's type changes to undead and its size remains unchanged. It retains any subtypes save alignment and those that indicate kind (such as humanoid, dragon, etc). It does not gain the Augmented subtype. It uses all the creature's base abilities except as noted here.
Hit Dice: Drop any HD from class levels (down to a minimum of 1 HD). Increase the number of HD left by 1/2 (round up) and change them to d12s.
Speed: Reduce the creature's land speed to 1/2 the original and this creature also loses any flight it may have had. If the creature had a swim or climb speed, reduce that to 05 ft a round.
Armor Class: Natural Armor bonus increases based on size. Tiny and smaller +00, Small +01, Medium +02, Large +03, Huge +04, Gargantuan +07 and Colassal +11.
Base Attack: Boneless have a base attack equal to 1/2 their HD.
Attacks: A boneless loses any natural weapons that rely on claws or teeth. Boneless gain two slam, attacks.
Damage: The slam attack is based on size. Fine- 01, Diminutive- 1d2, Tiny- 1d3, Small- 1d4, Medium- 1d6, Large- 1d8, Huge- 2d6, Gargantuan- 2d8, Colossal-4d6. Boneless lack the ability to use any weapons effectively (-10 on attack rolls and damage is halved).
Special Attacks: A boneless retains none of the special attacks of the base creature. However, it does gain two, an entagle attack and a smothering attack. Both are extraordinary in nature.
Entangle(Ex)- If a boneless hits with both slam attacks on a creature of any size, it can start a grapple as a free action without provoking an attack of opportunity (as per the Improved Grapple feat). This even works on creatures of widely varying size, such as a Tiny boneless latching onto a Huge opponent. However, the creature 'latched on to' suffers no ill effect unless the boneless is no more than one size category smaller than it is.
Smother(Ex)- If a boneless entangles a creature of up to one size category larger than it is, the next round, it can slither over the creature (making another grapple check to do so) and start to smother it by trying to cut off its air supply. The smothered creature starts to suffocate, as per the normal rules. Naturally, this attack only works on creatures with respiratory systems. Multiple boneless can overcome a signifigantly larger opponent by working together. Just remember that two creatures of one size category equal a creature one size category larger. For example, two Small boneless can entangle and smother an Ogre (a large creature).
Special Qualities: Boneless lose all special qualities that the creature once had. However, they gain the following special qualities.
Deathly Still (Ex)- A boneless can lay perfectly still in any position for any amount of time. This enables a boneless to Hide with a +10 on the check if there is something obscuring sight, like fog, shadows or covering on the ground. If plainly visible, This is a +10 to Bluff checks instead.
Damage Reduction(Ex)- the unique structure of a boneless grants it a damage reduction of 05/Slashing.
Cling(Ex)- Boneless have an uncanny ability to cling to surfaces, allowing them to lay ambush from walls or ceilings. This also grants a +02 bonus to Climb and grapple checks.
Rubbery(Ex)- Due to their lack of a skeleton, boneless have a +05 bonus to Escape Artist checks and checks to avoid being grappled.
Saves: Like all undead, the base saves of a boneless are equal to 1/3 their HD.
Ability Scores: Str +02, Dex +04, plus it loses it's Con score, its Intelligence changes to 02 and its Wisdom changes to 10 and its Charisma to 01.
Skills: Boneless have no skills.
Feats: Boneless lose all feats and gain Improved Grapple.
Environment: Any land and underground.
Organization: Any, but the smaller the boneless, the larger the numbers. Tiny and smaller tend to come in swarms.
Challenge Rating: Depends upon size. Fine- only as a swarm, Diminutive- only as a swarm, Tiny- 1/4 or as swarm, Small- 01, Medium- 02, Large- 04, Huge- , Gargantuan- , Colossal- .
Advancement: As standard for creature type, except for x 1 1/2 HD (max of 20), unless the base creature advances by class, then there is no advancement.
Level Adjustment: N/A

Sample Boneless Creature
This sample uses a human as the base creature.
Hit Dice: 2d12 (13 hp).
Initiative: +02.
Speed: 15 ft.
Armor Class: 14 (+02 dex, +02 natural).
Base Attack/Grapple: +00/+07.
Attack: Slam +01.
Full Attack: 02 slams +01/+01, 1d6+1 damage each.
Space/Reach: 5x5/ 5 ft.
Special Attacks: Entange, Smother.
Special Qualities: Undead type, Deathly Still, Cling, DR 5/slashing, Rubbery.
Saves: Fort- +00, Ref- +02, Will- +00.
Abilities: Str- 12, Dex- 14, Con- N/A, Int- 02, Wis- 10, Cha- 01.
Skills: None.
Feats: Improved Grapple.
Environment: Any.
Organization: Any.
Challenge Rating: 02.
Treasure: Standard.
Alignment: Always Neutral Evil.
Advancement: None.

Is definetely an unsettling template, however... without bones how do they even slump? And wouldn't their AC go down because they are now soft puddles? ;)
