As by Flesh to Stone, no.

Undead are immune to effects that require a Fortitude save, which FtS does.

However, you could use Polymorph Any Object to turn an undead creature into a stone statue.

Undead can be hit with the glass strike spell since the spell works on objects.

They are immune to anything that would require a Fortitude save unless it would also affect objects. Having said that, no they are not intrinsically immune to being petrified.

I was thinking more like a cockatrices or medusa's attack, not nessesarily the spell.

If they allow fortitude saves then undead are immune to it.

By the rules, undead are not treated as objects.

But by the description in the MM they can be affected by effects that affect objects or are harmless.

Undead are creatures, not objects; BUT

Undead are immune to effects that require Fort saves UNLESS such effects affect objects (such as a disintegrate spell).

Most petrification effects allow a Fort save. Therefore, undead are immune to straight-up petrification. They are not, however, immune to turn-to-stone effects that allow a different save or no save at all.

Immune here because it doesn't affect objects.

Petrification (Su): Creatures hit by a cockatrice’s bite attack must succeed on a DC 12 Fortitude save or instantly turn to stone. The save DC is Constitution-based. Cockatrices have immunity to the petrification ability of other cockatrices, but other petrification attacks affect them normally.
Immune here because it affects only creatures.

Petrifying Gaze (Su): Turn to stone permanently, 30 feet, Fortitude DC 15 negates. The save DC is Charisma-based.
Normally an object cannot see so it is not affected by gaze attacks at all. But that does that cover the clause where constructs and undead are immune to CON-save effects that don't also affect objects?

Breath Weapon (Su): 60-foot cone, once every 1d4 rounds (but no more than five times per day), turn to stone permanently, Fortitude DC 19 negates. The save DC is Constitution-based.
Turn what to stone? Breath weapons affect objects. I wish they were more clear here. Can a gorgon turn a wooden chair to stone? If so, then it can turn a stone golem to stone. Can it turn a ghost to stone?

And whlie the condition of being Petrified is described, there are no rules over Petrification attacks in general.

Flesh to Stone does indeed effect objects- all objects on the targets body are also turned to stone.

Undead are creatures. If the target line of the spell said "living creatures" then you would be right.

Irregardless, I don't believe the spell would work on undead for reasons already mentioned.

Undead are immune to creature-affecting spells that require a Fortitude save:

Flesh to Stone targets a creature and it requires a Fortitude save. Therefore, undead are immune to it.

Undead are creatures. If the target line of the spell said "living creatures" then you would be right.To clarify, the rules for undead traits (http://www.d20srd.org/srd/typesSubtypes.htm#undeadType) say:
"Immunity to any effect that requires a Fortitude save (unless the effect also works on objects or is harmless)."

This refers to the words (object) or (harmless) being in the spell's Saving Throw line (Flesh to Stone (http://www.d20srd.org/srd/spells/fleshToStone.htm) has neither)
