On certain monsters, such as the Unicorn and the Couatl, wouldn't adding claws really change their body shape? I mean, Couatls don't have any limbs except wings, as far as I know, and Unicorns need their hooves to run. I guess I should just add them anyway, huh?

I'd give the unicorn claw-like hooves (or is it hoove-like claws?) like the picture of the hippogrif in the MM. As for a coatl, I don't think I'd add claws since that would take away from the "snakiness" of the base form. I'd allow it to have dragon-wing-claws, though, and make attacks with them.

I wouldn't add claws if it didn't have digits in its original form. That's just my opinion though, YMMV.

For quadropeds, I rule that the front legs become arm-like with claws on the end.

For the Coutal, I guess it could grow claws out of the bend in their wings, sorta like a bat.

I would just give the unicorn sharp jagged hoves that it could make "Claw" attacks with. As for the Coutal I agree with giving them clawed wings.

Twin tail attacks, ala the styx dragon, are always nice.
