The way the spell is described it seems like when I summon a creature it keeps it's current templates(Celestial, Fiendish, Dire) and gains the Ice Beast template too. Is this the case?

Ice beast template removes all previous special attack and qualities and has no Int score. BSB and BAB are recalculated as constructs.

This essentially removes all the properties of celestial/fiendish templates. In other words, it doesn't retain them at all.

Your other question...
I do have a question or two though, kinda new and I'm not sure how the magical beast thing works. If you add the template Fiendish or Celestial to an animal or vermin they get the magical beast template. Doesn't that change their HD to d10s and raise their BAB to be equal to their HD?
No. You do not recalculate HD, BAB & BSB unless the template specifically says so. Templates that do so are generally undead (e.g. vampire) or construct (e.g. frost beast) templates.
