My question in brief: Does a creature's natural spellcasting ability stack with that of any class levels it has?
For example, if an Aranea (which can cast spells as a 3rd level sorceror) was given a level of the sorceror class, would it be able to cast spells as a 4th level sorceror or would it still cast them as a 3rd level sorceror until it had four or more levels of sorceror?

A spellcasting class is an associated class for a creature that already has the ability to cast spells as a character of the class in question, since the monster’s levels in the spellcasting class stack with its innate spellcasting ability.

Et voila!

From this excerpt, it says that the monster's spellcasting class levels stack with its innate spellcasting ability.

yes they do for purposes of spells per day, spells known etc. however a monsters inate spell casting levels should be treated in some ways like levels gained from a prestige class, because they do NOT stack for any other purposes such as familair power, or turn undead (for a monter who can cast as a cleric of x level) etc.
