THe 3.5 update book does not change the Death Knights damage resistance from 15/+1. (not that I could find anyway). Anyone know what this templates DR should be?

I would scale it according to the final CR of the death knight according to the MM 3.5, p.300, or simply make it 10/magic.

Ehh... maybe 10/magic and good. No sense in an evil spell damaging the death knight, but that's just me.

I would advice it being 15/magic and bludgeoning, or 15/magic and slashing. The 3.0 Lich had the same 15/+1 DR, and the 3.5 Lich has 15/magic and bludgeoning. Since the Death Knight's DR has the same description as the Lich's, I'd think they should have the same type of DR. But since the Death Knight is more corpse like, the slashing DR may be more fitting.

What do you think?

Spells and energy attacks ignore DR.

Well, the free adventure Matters of Vengeance (http://www.wizards.com/default.asp?x=dnd/oa/20031128a) gives the death knight a DR of 15/magic and bludgeoing.

Xeviat-DM guessed it right.

Just a tidbit of useless trivia. The man who wrote that adventure designed the 3.0 Death Knight, so that's probably as official as you're gonna get. ;)
