If demons can teleport at will, would'nt it be like fighting someone with a ring of blinking if the demon choose to fight while teleporting in and out of the area of the fight?

I don't get your comparison at all. I see no relation between teleport at will and a ring of blinking.

By 'teleport at will' it means that they can teleport any number of times per day. They still have to concentrate in order to teleport, it's not instantaneous, so they can't fight and teleport around like fighting someone with a ring of blink. In game mechanics, their teleport takes an action to use, so unless they have a particular feat that lets them use it as a free action, it's not possible to fight and teleport in the same round.

Teleporting is a standard action. This means that in any given round, a demon who opts to teleport is left with only a move action.

I suppose a demon which does nothing but zip around the entire battlefield could make for a very annoying and tedious fight, but it wouldn't be a challenge either.

You are thinking of it teleporting to somewhere else and back again as free actions in response to the opponent's attacks. It does not work that way, I assure you.:)
