would somebody be able to tell me in which book I might find a dire wolverine or perhaps a dire animal template?

Dire Wolverines can be found in the Monster Manual on page 66.

There is no Dire Creature template put out by WotC.

you can find a Dire Creature template in Tome of Horrors by necromancer games (3.0, but I hear that a 3.5 version exists although I have never seen it) but it is a different take on "Dire Creatures" all together, and the dire animals from WotC sources can not be made with it.

Correct, because if the dire animals in the MM1 had little enough variation that they could all be reproduced with this template, well, then the need for a template would be much more self-evident to begin with.

This template does not replace the dire animals in the MM: it lets you make respectable, believable dire versions of animals that have not already gotten the dire treatment. Obviously.

I suggest making dire animals on your own from scratch, and then checking on the boards for CR

Certainly you could do that, by why bother when simply applying a template has most of the desired effect?

I agree, the template is pretty good and not that far off from the upgrades in the MM
