This is my new dragon race...There still is some work to be done but I would really apreciate it if you peach this...
Dragon Elemental
Dragon (All Basic types of elements)
Climate/Terrain: Anywhere in the material plane.
Organization: Wyrmling, Very young, Young, Juvenile, and Young Adult: Solitary or Clutch (2-5); Adult, Mature Adult, Very Old, Ancient, Wyrm, or Great Wyrm: Solitary, Pair, or Family (1-2 and 2-5 offspring)
Treasure: Double Standard
Alignment: Always Neutral, but can sway in either direction due to influence.
Dragon Elementals an incarnate of Nature’s brute force. Always searching for more power yet, most of the time prefers to keep to itself.

Combat
Dragon Elementals almost always will try to avoid fights if necessary, but if they are encountered by foes, adults (or older) dragons will hover 30ft. off of the ground so it can get out of the way of personal injury while their elementals do all of the hard work. If their adversary is too strong the dragon will attempt to crush the opponent and then start picking away at the enemy with bites and claws.
Breath Weapon (Su): Dragon Elementals when born and up until they are a Mature Adults have four types of breath weapons, a line of lightning, a cone of fire, a cone of cold, and a line of corrosive acid.
Elemental Aptitude (Su): When a Dragon Elemental hatches it mentally chooses an element to devote itself to. If Earth the dragon gets a dig speed equal to its walk speed, and also gets transmute mud to rock 3/day and transmute stone to rock 3/day. If Water then the Wyrmling gets the ability of water breathing and gains water walk 3/day. If the Wyrmling chooses fire it gains the ability to cast fireball 3/day and wall of fire 3/day. If Air was chosen then the dragon gains cloud walking and wall of force 3/day.
Cloud walking (Su): The dragon can trend on clouds or fog as though on solid ground. The ability functions continuously but can be negated or resumed at will.
Water Breathing (Ex): The dragon is able to breathe underwater indefinitely and can freely use its breath weapon, spells, and other abilities while submerged.
Elemental Resistance (Ex): The dragon elemental gains immunity to one element according to its chosen element at birth. Earth gives acid immunity, Air gives lightning immunity, Water gives cold immunity, and Fire gives fire immunity.
Elemental Control (Su): When a dragon elemental becomes an adult it gets the ability to summon one greater elemental or two large elementals 4/day of its chosen element.
Breath of Power (Su): After a dragon elemental becomes a mature adult it loses some of its capability to breathe any element that is not related to its chosen element, but in return it gains a +10 damage bonus to its breath weapon.
Elemental Movement (Ex): Once becoming ancient any dragon elemental become more proficient at moving on its chosen element. It gains a +20ft. bonus to movement whenever moving on or in its chosen element.
Controller of Elements (Su): Once a great wyrm a dragon elemental becomes a so-called lesser deity in a way. It gains a weaker version of the divine power Divine (Earth, Water, Fire, or Air) Mastery. The extent of its power with this ability is up to the DM, but after becoming the true elemental it gains full mastery of that element.
True Elemental (Su): After becoming a great wyrm a dragon elemental can turn itself into a pure mass of energy of its chosen element, but at a cost. The dragon must consume its entire hoard and then meditate for one day before it transforms permanently. The dragon elemental brings the end of its life on as soon as it turns into the mass of energy. Its body falls to the ground limp but its soul and energy masses together to form this mass of energy. You may count this as being a primal elemental of the dragons chosen element. It loses all of its abilities as a dragon except for its Controller of Elements ability.
Spell-Like Abilities: 3/day Polymorph self. A dragon elementals polymorph self works just like the spell, except that each use allows only one change, which lasts until the dragon assumes another form or reverts to its own (which does not count as a use of this ability).

First, let's get the name right. Names matter.
"Dragon Elemental" sounds like an elemental that's made of Dragons. Or a dragon-shaped elemental.
Use Elemental Dragon instead.

Next, about alignments... I'd suggest that Elemental Dragons of Fire and Air are Usually Chaotic Neutral, while Earth and Water are Usually Lawful Netural

Now, about those tables. I'm not sure if you noticed or not, but pretty much all True Dragons (chromatic, metallic, planar, etc.) are built on one of three "types": big dragons (your Golds & Reds), small dragons (your Whites) and Medium Dragons. (the rest)

Your Hit Dice are almost right for a Big Dragon, but you have one too many at Wyrmling.
Your Size Categories are off. Big Dragons start at Medium, and spend the three age categories at Large, Huge, and Gargantuan each, ending at Colossal.

Dragon Elementals almost always will try to avoid fights if necessary, but if they are encountered by foes, adults (or older) dragons will hover 30ft. off of the ground so it can get out of the way of personal injury while their elementals do all of the hard work.

Adult and older dragons don't have the flight manueverability to Hover, unless you give them the Feat.

Breath Weapon (Su): Dragon Elementals when born and up until they are a Mature Adults have four types of breath weapons, a line of lightning, a cone of fire, a cone of cold, and a line of corrosive acid.

This is inconsistent with the rest of your abilities. The Elemental Dragon should have one type of breath weapon, based on their Elemental Aptitude.
Also, mapping Lightning to air and Acid to Earth are both poor fits at best.
I'd suggest lowering the breath weapon damage by maybe 1/4, and making the breath weapons more interesting:
Air: The dragon breathes a Line of roaring wind; all creatures in the area suffer sonic damage, as well as Wind effects (http://www.d20srd.org/srd/weather.htm#winds) based on the size of the dragon. Small & Medium dragons create Strong Winds, with the severity of the wind increasing one step per size category, so that Colossal dragons produce Tornado-force winds
Earth: The Dragon breathes a mass of gravel, sand, and rocks. Creatures in the area suffer bludgeoning damage with a reflex saving throw for half damage. Those who fail their reflex saving throw must roll a second reflex saving throw or be knocked prone.
Fire: The Dragon breathes a cone of burning embers. Creatures suffer fire damage, with a Reflex saving throw for half damage; those who fail their saving throw must also roll a Fortitude saving throw (same DC) or be blinded for 1 round per age category of the dragon.
Water: The dragon breathes a line of water. Creatures suffer bludgeoning damage, with a reflex saving throw for half damage. Additionally, they must roll a Swim check (DC 15 + the Dragon's Constitution modifier) or be pushed back one square for every 5 damage suffered. The Dragon may choose to deal nonlethal damage with its breath weapon.

Elemental Aptitude (Su): When a Dragon Elemental hatches it mentally chooses an element to devote itself to.

The Dragon should also get the subtype appropriate for its element. [earth, air, water, fire]

Hmm. Transmute Stone To Rock you say? I'm not familiar with that one...
Technically, creatures have Burrowing speeds.

If Water then the Wyrmling gets the ability of water breathing and gains water walk 3/day.

It should probably also get a Swim speed. Also, maybe giving it some more useful SLAs, like conrol water or obscuring mist.

If the Wyrmling chooses fire it gains the ability to cast fireball 3/day and wall of fire 3/day.

Hmm. Is rock to mud and water walking as powerful or useful as fireball & wall of fire? No? I didn't think so.
Produce flame and fire sheild are probably more in line with the rest of the SLAs so far.

If Air was chosen then the dragon gains cloud walking and wall of force 3/day.

How about control winds and wind wall? Again, it sucks to be the Earth Dragon with rock to mud as your offensive SLA when others are running around with wall of force and fireball.

These SLAs need work. I'd suggest looking at the Half-Elemental template; it has SLAs for all four elements that fit better.

Nearly right. Dragons with the Fire affinity should get the [fire] subtype. Frankly, I'd rather see the Earth affinity grant something more like DR, either DR x/- or DR /adamantine.

How exactly does this work for the Fire dragons? I think something like the Mephit's 'conditional' Fast Healing would probably be a better fit here.

OK, look. Saying "a weaker version of... the extent of its power is up to the DM..." comes across as shorthand for "I had an idea, but didn't bother to flesh out the details, so make it up yourself". That's lousy monster design, and lazy to boot.

Now, slapping a Divine ability on a creature isn't something that should be done lightly. It's not entirely appropriate for creatures outside of Epic-level play, to say the least.

True Elemental (Su): After becoming a great wyrm a dragon elemental can turn itself into a pure mass of energy of its chosen element, but at a cost. The dragon must consume its entire hoard and then meditate for one day before it transforms permanently. The dragon elemental brings the end of its life on as soon as it turns into the mass of energy. Its body falls to the ground limp but its soul and energy masses together to form this mass of energy. You may count this as being a primal elemental of the dragons chosen element. It loses all of its abilities as a dragon except for its Controller of Elements ability.

So basically, it becomes a Primal Elemental with one Salient Divine Ability, have I got that right? Your goal is for this creature to be at least CR 35 by the Great Wyrm stage? Because that's the CR of a Primal Elemental without the SDA, and it would be silly to make a monster that can spend a day in seclusion to turn into a phenominally more powerful creature.

Why do these dragons have this ability? It makes no sense. They're elemental-oriented; why can they turn into bunnies or goats or elves or whatever? I could see it turning into another creature with the same elemental subtype...
If it's a Spell-Like Ability, what is it's caster level?

should not the dragon also gain a weakness? for instance gold dragons have cold vulnerability as white have fire? if you r dragon chose earth(like your dragon character did) then should it not gain a weakness to air? and vice versa? you should figure thast out if earth breathes acid then it should have lightning weakness, jsut as if he/she breathes fire then he/she should have a cold weakness.

For True dragons, the vulnerability to the oppsite energy is a facter of the subtype it gains. Thus, Silver dragons (subtype [cold]) are immune to cold and vulnerable to fire.

dok already suggested the subtype, just what I was thinking :)
