I need to change the Gold Dragon from a fire dragon to a "good" dragon, and I need to change the Black Dragon from a water dragon to an "evil" dragon. What changes, other than subtype, should I make to them to perform this change?

None that I'm aware of, other than the fact that you need to remember that the creature's natural weapons now act as though the were of that type for DR purposes.

I hope you are aware that the good/evil subtypes technically only apply to outsiders...

Now that that has been answered, why do you need to do that? Why Gold and Black? Are they opposing one another? If so, remember that Black dragons are not the strongest of the Chromatics, whilst Golds are the strongest Metallics.

Okay, I'm not directly refering to just giving them the subtypes of good and evil, I'm talking about making alterations to their breath weapons and other abilities to make them into good and evil dragons.

I'm doing this because my world has need for a good and evil dragon, but it doesn't have need for two dragons of the same element within the same variety of dragons. Brass is Metallic's fire, Gold is Metallic's alignment. Black is chromatic's alignment, while green is chromatic's Acid. I know the red dragon is the most powerful of the Chromatics, but it's okay to me if there's a power descrepancy between the elements: Silver womps on white after all.

Also black dragons just look more evil, and gold's appear more good.

How about changing the breath weapon damage to holy/unholy and decreasing the die size by one step to help balance it?

Another idea is to make both the 'good' and 'evil' dragons cast as clerics instead of sorcerers and switch their cha & wis score to match. Also, give them the associated power over undead at a level equal to their caster level.

You might want to change their DR to x/magic and good/evil.

If you use these changes, the dragons' CR will probably warrent a one or two point increase.

You could just add celestial/fiendish templates to the dragons in question. Holy Smite anyone?

Don't forget that when the Gold Dragon loses its fire subtype it also loses its immunity to fire and vulnerability to cold.
