I search the monster that eat the opponent and become more powerful.

If it eat the opponent, perhaps he obtain the traits of the creature for example.

The traditional Wendigo does that too. Although I don't remember if Wendigos are anywhere in D&D

There's a creature in "Monsters of Faerun" that tears out and eats people's hearts because they believe that if they can find and consume the correct creature's heart they can attain some sort of higher, transcendant form. I forget how its spelled though, but it began with the letter 'p'; it was 'Perilyton' or something vaguely to that order, but don't trust my attempt at spelling it.

The monster that was being looked for is probably the Maurezhi Tanar'ri, from the Fiend Folio.

Wasn't there a beetle-like outsider from Pandemonium that did that, in 2e? The muska, or something like that?

The Maurezhi from the Fiend Folio (as previously mentioned) gains HD, skills, and feats from eating humanoids.

The Illithid Savant prestige class from Savage Species does something similar for illithid who consume the brains of their enemies/prey.

The Illithid Savant prestige class in Savage Species lets you gain the traits of creatures you eat. I took the Wendigo template in Fiend Folio, the Fleshvigor template in Dragon #315, and coverted the Savant PrC for a more cannibal/ghoul flavor and got something a lot like the Wendigo in Ravenous (the old eat the flesh of your enemies to absorb their strength). It worked pretty good, but you have to keep an eye on what type of abilities you let the Savant PrC use, because it can get pretty sick.
