My Feeblemind question is because the party used this method to gank one beholder (I had it just bite attack after the spell). They are going to fight a second and I don't want to make it too easy for them.

The answer is 'yes and no'.

The eyestalks are part of the beholder. Just because a human has been rendered stupid doesn't mean he can't throw a punch or gnaw on your leg or tackle you, for instance. However, the beholder wouldn't be able to use them as effectively since he won't be smart enough to use the kinds of intelligent tactics beholders are known for.

indeed.

the use of its eye stalks is not hindered by lack of intelligence. As SU abilities, no min. int score is required.

however, lack of intelligence does hinder the ability to use the eye stalks in any intelligent way.
