How do you handle, or would picture a pair where one half is immortal or has a long lifespan and the other being around the human lifespan, living and going through the motions as the human side grows older?

When you say "pair," what kind of relationship are you intimating (as that will be a large factor). But to put this into a perspective that's easier to understand by those of us in the real world, think of the immortal person as a normal, healthy person and the mortal person as being terminally ill.

That said, it is a classic tragedy in the making--because you know that it does not and cannot end well.
