OK, if you take levels of a PrC that you can qualify for without spellcasting, and do, then later take levels of a spellcasting class, do the PrC class levels still stack with the casting ones for spells known and spells per day and all?

Case in point, the Ruathar, in Races of the Wild. 3 levels, full spellcasting progression, prerequisites are as follows.
BAB +6 OR
Any skill at 9+ ranks OR
Ability to cast third level spells
Special: In addition to meeting one of the above prerequisites, you must have performed a great service to an elf community, such as participating in the defeat of a monster with a minimum CR of 10, recovering a valuable Elven artifact, or risking death in order to save an elf's life.

So, lets say you qualify by going six levels of fighter. Then take a level or two of Ruathar, then a level of Sorcerer. Would the levels of Ruathar still boost your spellcasting abilities, as though you had had the spellcasting levels from before taking the Ruathar levels?

I'm 90% sure that you need to have spellcasting first. The idea of picking up a single level of sorcerer and suddenly having level 2 spells is just bizarre. That, and it is usually +1 level of existing class.

As archerpwr said, it gives you +1 of existing spellcasting.

If you don't have spellcasting when you get the "+1 level of existing spellcastion" you don't get it. The example class I think of is the Dragonslayer which offers 1/2 casting starting level one; anyone can enter the class but without spellcasting you don't get the level ups in casting retroactively even if you pick up some casting later.

Note the "or" there. If the benefits were applied to anything other than spellcasting at the time you took the PrC, you wouldn't be able to apply the spellcasting increase afterwards, no matter how many spellcating classes you take. You would need to completely retrain the benefits over to the spellcasting class.
