I'm wondering about the Age Category stuff in the Player's Handbook. Is there any way in Core D&D (PHB, DMG, MM) to accelerate or reverse a human's (or demi-human's) aging?

Not really. They're largely there for NPCs or for those DMs who allow PCs to start at ages outside the typical starting range.

There used to be in 3.0. However, most aging abilities have been replaced with flat ability damage or drain in 3.5, as there was no way to reverse them.

For players, it's useful for min-maxxing spellcasters, but that's about it. DMs use it more to make older characters.
