I'm looking for a Gelatinous cube - like race ...

sadly my DM doesn't allow 3.0 material (so bye bye ooze master :( )

or any idea how to make a ooze intelligent? (and thus playable?)

There is an intelligent ooze that can even assume humanoid form for several hours per day in Monsters of Faerūn: the Ghaunadan. These are quite interesting, I think, and only have a few racial HD. No LA is given in the entry, iirc, but they could easily be made playable.

there is a gelatinous template in savage species. But i don't have my books here so i can't elaborate.

Actually, the 3.5 Update gave them a LA of +6 for a total of 11. That might be a touch high in my opinion, but it is a starting place and does make it "official".

You stated your DM has disallowed 3.0, what about homebrew stuff on the boards? I've seen a few good oozemaster alternatives on the boards...perhaps he'll be open to that? In any case, hopefully one of these posts brings you one step closer to being a gelatinous dude.

The fiend of possession PrC (FF) could repeated possess an Ooze, eventually gaining long periods of complete control of it.

There is an Awaken Ooze spell in Dragon Magazine 304 but also 3rd edition.

The Thrall of Juiblex PrC (BoVD) is ooze-based but also not 3.5 edition.

play a fiendish gelatenous ooze. Fiendish raises the Int of whatever it is applied to, to a minimum of 3. That is also the bare minimum of what a playable character can have.

The Slyth from Underdark are not really oozes (thy don't have the ooze type), but they do have the ability to change at will into an amorphous ooze-like alternate form. They have a LA of +2.
