It says that you lose all types and subtypes pertaining to alignment and *kind*.

What does "kind" mean? Does, say, the Fire subtype count as "kind"?

'Kind', I belive, refers to your clasification. Humanoid, Mosterous Humanoid, Animal, Outsider, Whatever.

From the Monster Manual p. 225
"The creature’s type changes to undead. It
retains any subtype except for alignment subtypes (such as good)
and subtypes that indicate kind (such as goblinoid or reptilian).
It does not gain the augmented subtype. It uses all the base creature’s
statistics and special abilities except as noted here."

It is as Herne says.

"Fire" is an elemental subtype. "Good" is an alignment subtype. "Elf", "Dwarf", "Human" and "Gnoll" are kind subtypes. Only humanoids have kind subtypes.
