While I was busy doing things this morning an idea poped into my head, and the more I started to think about it the more I waned to get it down so I wouldn't forget it. Sadly I forgot most of the juicy parts but I have enough to get the idea down.

Basicly I was thinking of an ability that made a creatures defences adapt to the dangers around it. Having their existing defences like DR, SR, and resistances/immunitys, change to protect against the new threat.

Now this might be a little confusing at first but let it roll around your head for a bit.

Lesser Adaptive Defences
Requirements ???

Benefit
At the beginning of your turn one of your defences (DR, SR, or resistances/immunity) changes slightly to protect against the most threatening attack made against you last round. You may choose which defence changes at the beginning of your turn. You may also use a move action to change all your defences.

Adaptive Defences
Requirements Lesser Adaptive Defences, ???

Benefit
At the beginning of your turn any defence you have (DR, SR, and resistances/immunity) changes to protect against the most threatening attack made against you last round. You may also choose to have your defences change by one or two steps.

Greater Adaptive Defences
Requirements Adaptive Defences, ???

Benefit
You may change any defence you have (DR, SR, and resistances/immunity) to strongly to protect against that was just made against you up two three times in a combat round. You may choose to have your defences change by up to three steps.

Example. An adult white dragon is hit with a fireball, some fire enhanced arrows, and a shot-put. At the beginning of its turn its Lesser Adaptive Defences changes its cold immunity into cold resistance 40 and gains fire resistance 10.
If the dragon had Adaptive Defences changes its cold immunity into cold resistance 40, and gains fire resistance 10 or if it chooses it can change by a second step making its cold resistance 30 and fire resistance 20. It can also choose to have its SR against Evocation spells increase at the cost of it lowering for all other schools of magic, or it can choose to have its DR change to better protect against piercing gaining DR 5/ Slashing or bludgeoning, magic.
If the dragon had Greater Adaptive Defences all of its defences could change to better protect it, and they can change immediately after any attack up to three times during a combat round by up to three steps. First after the fireball it chooses to change its cold resistance to 30 and gain fire resistance 20. It also chooses to have it’s SR protect more against Evocation spells making it’s SR against Evocation spells go up by 4, and against all other schools it lowers by 4. Second after being hit by the arrows it takes no damage from the fire as it didn’t deal more then the dragons new fire resistance, but being magical they passed the DR and did damage. The dragon chooses to protect itself from piercing by gaining DR 5/ Slashing or bludgeoning, magic. Lastly it’s hit by a non-magical shot-put which deals bludgeoning damage that would bypass the DR, but since it’s non-magical it doesn’t but still does enough damage to overcome the DR and damage the dragons it chooses to change it’s DR to DR 5/slashing, magic.

At the start of the dragons next turn its defences are now. Cold resistance 30, fire resistance 20, SR 16 (24 against Evocation spells), DR 5/slashing, magic. From the start of this new round until the beginning of the next round the dragon can change its defences up to three times.

Well I tried to make a chart/table but it never works out so this is probably going to be a PITA to read.

Defence Resistance/immunity
1st step One element changes by up to 10.
2nd step One element changes by up to 20.
3rd step One element changes by up to 30.

Defence Spell Resistance
1st step Increases by two for one school lowers for all others by two.
2nd step Increases by four for one school lowers for all others by four.
3rd step Increases by six for one school lowers for all others by six.

Defence Damage Reduction
1st step Gain one additional requirement to overcome your DR.
2nd step Gain up to two additional requirements to overcome your DR.
3rd step Gain up to three additional requirements to overcome your DR.

Well thats my idea let me know what you think about it both good and bad.

Sounds like a solid idea, except that personally if I was fighting a white dragon, cast fireball on said dragon, and then found out next round it not only had increased resistance to fire damage, but increased SR to evocation spell, I would be a bit tiffed.
Some creatures I can see with an ability like this, but not standards such as dragons, maybe something from the Abyss, a chaos based creature.

I just used a dragon as the example because it had SR DR and an energy immunity. A well played dragon encounter is hard enough as is I wouldn't make it harder by giving them an ability like this.
