If I'm roleplaying a centuar fighter or ranger, can I get the trample feat and use it like a character on a mount?

No.

HOWEVER, you should take this feat:

Centaur Trample
Source: Races of the Wild

Prerequisite: Centaur, Dex 15.

I bet you can figure out what it does.

Yes, actually.
Races of faerun explicitly allows centaurs to acquire the spirited charge and trample feats without having to meet the prerequisites.:)

Honestly, Spirited Charge makes no sense to me.

Normally, you use the horse's muscles to get the extra damage on a spirited charge.

But if you are a centaur, you are using your own muscles. And that is different from a normal charge how??

I would say 4 legs propelling your charge as opposed to 2, in fact 4 horse legs as opposed to 2 human legs.

I would just interpret spirited charge to mean that you are able to better use the momentum of your charge better.:)
