Is there a feat that allows you to make an AoO when someones make/misses an AoO on you? Just wondering, and if so, what book is it in?

nothing official that I know of, though I did homebrew some counter feats that work kind of like that.

There's Robilar's Gambit, which allows you to take an AoO whenever someone attacks you, period. Hit or miss, you get an AoO on them. That feat's in PHB 2.

Also, there's Karmic Strike in Complete Warrior, which allows you to take an AoO whenever someone hits you.

There's Defensive Throw from CW, which gives you a free Trip attempt when someone misses an AoO against you. [There's a fair amount of disagreement about whether Improved Trip would allow you to follow up with a melee attack, or whether you just get a chance to trip them; no sense rehashing that argument here.]
