I'd like an Ascetic Stalker style feat that allows his levels to stack for unarmed damage and rebuking undead. Does anything like this exist? If not, could someone help me word it properly? I don't want there to be any confusion as to why he kicks ass.

Check out Body Blades, Balor's Nimbus, and Darkfire. Now proceed to roll more d6's than the Rogue. That is a very simple way to make the Monk/Cleric idea work. There are other ways to make an unarmed Cleric asskicker, but this one is easy. Just make sure you're not fighting Huge or larger creatures often, or get yourself a belt of Enlarge Person (or a custom item of Giant Growth).
