Basically, can a human wield a medium sized Greatsword in one hand?

Maybe. It depends if you want to allow him to use the 3rd edition version or to use the updated 3.5 edition version.

In third edition it only worked for one weapon that you had to specify when taking the feat and it allowed you to wield a two-handed weapon in one hand, but it did not allow you to wield a larger than normal weapon in two hands.
