I'm seeking for rules that support long-term sword duels, something like parrying. I personally like Star Wars- saga Block and Deflect talents. Something like that and ToB style maneuvers.

Your AC already accounts for parrying, additionally so when Fighting Defensively or using Combat Expertise. It's up to you to add the flavor of a duel to the existing mechanics.

There is the variant rule where you "roll" your AC against the opponent's attack roll.

I think you ignore your 10 base armor, but I don't really remember the details. Also, I can't remember whether it was in the PHB or the DMG (probably DMG). Um... glad to be of help?

Well ToB has several "parry" or "deflect" style moves that you can use. And in unearthed arcana ( a lot of which is on d20srd.org) there is the roll the 1d20 rather "taking 10" on your AC options. In the MiC there is also a couple of parryying style weapons, or the feat melee evasion that lets you try and evade attacks whilst fighting defensively or karmic strike that lets you counter attack well.

Though for the most part you can take some of those things and use them but a lot of the duel comes from actively describing what's going on.
