Occasionally though, doing damage or having versatility to my spell list would be nice. My question is: is arcane disciple a viable way to do that, and if so, what domains would you suggest?

You also need a high Wisdom to cast the domain spells in the first place. Luckily, as a Beguiler, you don't have to worry about spending spells-known on the domain spells. Look at the Reserve Feats from Complete Mage as well. They can work well in combination with Arcane Disciple, if you don't normally have access to the right kind of spell to fuel the Reserve Feat.
