From what I understand, sneak attack damage may be added to damage from ray spells when the target is denied their dex. Is this only from rays that deal damage? What about ability damage? (like ray of enfeeblement)

Ray of Enfeeblement is an ability penalty, not damage, so sneak attacking with it does nothing special.

If the ray deals some kind of damage other than hit point (see: Enervation), you deal additional sneak attack damage as negative energy (HP) damage, otherwise the Sneak Attack damage is the same damage type as the spell in question.

Salla has it right.
There is a good explanation of weapon-like spells, at the begining of the spells chapter of Complete Arcane.

The same information about sneak attack with spells was in a Rules of the Game article. The wizards site is having problems finding archive material, but here's a copy: Rules of the Game: All About Sneak Attacks (Part Four) (http://www.triskpoli.com/dnd-articles/rules-of-the-game/All-About-Sneak-Attacks-Part-4.htm).

Yep, no attack roll = no sneak attack.
