Can a priest roll a spellcraft check to identify mage/bard/druid spells?

Yes. The skill does not impose any such limitation.

Nothing in the skill description limits the user to only the type of spells they can cast.

Anyone can use Spellcraft to identify any spell. A rogue who takes ranks in Spellcraft can identify any spell, even though they can't cast any spells themselves.

What is the check DC to identify a spell, that is already in affect, like Mageamor, Stoneskin or Resist Energy (Fire)?
When could a char notice a spell, which is in Effect? At the 1st Hit or only with a Detect Magic spell?

DC 20 + spell level : Identify a spell that’s already in place and in effect. You must be able to see or detect the effects of the spell. No action required. No retry.

As for visible spells, that's usually up to the judgement of the DM. A considerable number of spells are only worthwhile because their effects can't be seen outright, though they might be sensed in other ways (Sense Motive for enchantments, listening for Invisibility, etc). But for things like stoneskin and fire shield could probably have a visible manifestation. Spells that are instant in duration, though, that's pretty much a one-shot chance.
