A spell-theif can forgo only 1 die of sneak attack damage to steal a spell. He can also forgo 1 die of sneak attack damage to steal one spell effect from the target. He can also forgo 1 die of sneak attack damage to steal spell resistance, etc. He can do all of this simultaneously if he sacrifices multiple sneak attack dice, but he cannot sacrifice multiple sneak attack dice to gain the same benefit multiple times at once. A 5th level spelltheif could not give up both dice of Sneak attack to steal 2 spells.
