With two weapon defence does the weapons enchant ment bonusfigure into the shiled bonus. For example a +1 dagger in the off hand would get a +2 bounus to ac.

Assuming you mean the feat chain, no. The feats state you get +1 shield bonus to AC.

There are however, "Greater" and "Improved" two weapon defense feats- each adding another +1 to the bonus.

THe enhancement bonus of your weapons in no way effects the feat.
(for that matter- you don't have to be using magic weapons at all, for the feat to work).

Defending weapons allow you to add the enhancement bonus to your AC.

But doing so takes the bonus from the attack/damage so a +5 defending weapon can be +2 AC +3 hit/damage or any other combination including +5 AC or +5 attack/damage. If I remember correctly

Speaking of two weapon fighting... does anyone know where I can find the Ambidexterity Feat? Or at least what it does? Maybe a thread.

Ambidexterity is in the 3.0 PHB.

You won't need it in 3.5, as its benefits were rolled into the two-weapon fighting feat.
