A Jump check (your mounts Jump bonus)?
or a Ride check (your bonus)?

You have to make a Ride check to convince the horse to do what you want (unless he has been trained to specifically do it as a 'trick')

Then the Horse needs to make a jump check to make sure he succesfully does what you told him to do.
