would weapon finesse dex bonus stack with str or is it 1 or the other?

if you get it for unarmed would it cover grappling or would you buy it twice

Weapon Finesse does not stack with the STR bonus to hit, it is in place of it. Your STR bonus is still responsible for your damage modifiers, it would just no longer be related to your attack bonus with Finesseable weapons.

In 3.5, Weapon Finesse applies to ALL weapons which qualify as light or otherwise mention you can use it with Weapon Finesse (such as the Rapier).

Weapon Finesse can only help you to start a Grapple, but not help you with your Grapple Checks. It will help you if you try to attack with a light weapon in a Grapple though.

If you have a low STR score, you pretty much should avoid Grappling if possible, because your Grapple Checks (which handle things like Pinning an opponent or breaking free) are low - though if you Grapple for the express purpose of denying your opponent a good way to deal damage to you, you may actually be OK, and can use Escape Artist if you need to escape from a bad Grapple.

I may be mistaken, but I believe somewhere in some book, there is a grappling finese feat. It allows you to use your DEX score in place of STR in making grapple checks.

You are refering to a feat in the quintessential monk, by Mongoose, not WoTC.

That said, as a DM, I would allow a monk to use his dex bonus from weapon finesse in grappling as long as he utter the word Aikido anywhere in his justification.
