Has anyone tried converting the 2E clerical domains to 3E? How did it work?

If you refer to the sphere system, the answer is simple: it can be done.

What one has to so is that clerics use their normal spells per day, -1/level, to cast spells chosen from their domains (which require a heavy retooling to represent more normal spell lists, but more like they are in 3e, providing a number of good, solid spells for each and every level), whereas they may cast 1 or 2 spells per level from the cleric spell list (which is brought down a bit to resemble the All sphere). Bonus spells can be assigned as seen fit.

It is important to reimpose Minor and Major access, meaning that clerics may not cast any spell above 4th level (as opposed to 3rd as it was in 2e, since they now can cast up to 9th-level spells instead of 7th) in any sphere they only have minor access to.

That's what I did some time ago; I'll look through my notes later.
