Would gestalt Ranger/Urban Rangers or Cleric/Cloistered Clerics work?

They would be much weaker than other gestalts because of the overlap. I wouldn't recommend it.

I probably wouldn't allow it. Gestalting is kind of like multiclassing on crack, and since you can't multiclass with variants, I'd rule you can't Gestalt with variants.

Actually, you can multiclass with variants. It's an optional rule (as everything else is). The example they give is of a halfling rogue/wilderness rogue; you only treat the first variant you take as a favored class, so adding sorcerer or something might draw EXP penalties in this example.

You could gestalt TWF Ranger with Ranged Ranger.
