I just got my copy of the Expanded Psionics Handbook, and was reading the racial description of the Elan. Would it be possible for one of these guys to takes levels in Human Paragon from UA?

I don't think so. They should have their own, considering how different they are from humans. Just like the Drow has a different paragon class for it's unique abilities, the Elan paragon class should be one that makes the Elan better at being an Elan. Maybe giving it the ability to spend a power point so that it doesn't need to eat for 2 days or something.

There's a problem with using 1 daily power point so that you can't eat for 2 days. Think about it.

I see your point. That would be hard to balance. Maybe you could have them spend power points to gain +6 to one specific save, to use on their next saving throw(instead of +4 to all saving throws). Or whatever.

I would design an Elan Paragon class, rather than allowing Elans to take levels in Human Paragon. However, given the similarities between the two races (elans were once human, after all), I would design the class to be very similar to Human Paragon. In fact, I'd probably just swap spellcaster level for manifester level, require the ability boost to be in a stat which drives the elan's psionics, and be done with it. The rest seems to fit elans as well as it does humans.
