Okay, I know that you can't take two PrCs at once for a Gestalt character. Say I have the following, however:

Barbarian/Wizard up to whatever level.
Alienist (PrC with 1/1 caster level progression)/Wizard once the prereqs are met.

I would get the class features of both classes at all times.

The way I see it, I would be a level 10 (for the sake of argument) Wizard/Barbarian and be a level 10 caster at level 10. If at levels 11-15 I was an Alienist/Wizard, would I then be a level 20 caster and receive all appropriate spells as such?

It doesn't seem right since it's possible to get many PrCs at level 6, thus ensuring that I could be casting level 9 spells by character level 11.

Anyway, is this right?

No, this isn't right. The same class abilities do not stack. If you are gestalting like that you would get the spellcasting abilities of the wizard and the special abilities of an alienist.

Now if you were going wiz and sorcerer you could possibly use the bonus levels granted by the alienist class to improve your sorcerer casting ability, but you cannot imrove the same thing at the same time like that.

It is a wierd system that needs careful looking at, but your abilities will never go beyond your character level. A 5th level character can only cast as high as third level spells and so on. and a 10th level rogue only has 5d6 in sneak attack even if there is a PrC tacked onto the other side that gives a sneak attack bonus too.
