Some DMs enjoy creating NPCs with a flourish of mechanics that rivals that of the best powergamer. If you are one of those DMs, don't bother reading any further. Some DMs however, like to spend as little time writing up NPC stats as possible and being able to run them with as little fuss as possible. These NPC classes are for those DMs:

The Arcane Caster
HD: d6
BAB: Poor
Good Save: Will
Skills: 2 + Int
Special Abilities: Metamagic Specialist, Combat Finesse (at 11th)
Spells (Int Based): Spontaneous Caster, New Spell Levels every odd level, ending with 4 spells known and 4 spells per day in each spell level.

The Divine Caster
HD: d10
BAB: Average
Good Saves: Fort and Will
Skills: 2 + Int
Special Abilities: Metamagic Specialist, Combat Finesse (at 8th and 15th), Turn Undead (Variant Style from Complete Divine)
Spells (Wis Based): Spontaneous Caster, New Spell Levels every odd level, ending with 6 spells known and 6 spells per day in each spell level.

The Sneak
HD: d8
BAB: Average
Good Save: Ref
Skills: 8 + Int
Special Abilities: Combat Finesse (at 8th and 15th), Sneak Attack (as rogue), Trapfinding, Evasion (at 2nd), Uncanny Dodge (at 4th), Improved Uncanny Dodge (at 8th), Improved Evasion (at 10th)

The Tank
HD: d12
BAB: Good
Good Save: Fort
Skills: 4 + Int
Special Abilities: Combat Finesse (at 6th, 11th and 16th), Weapon Focus (at 1st), Weapon Skill (at every even level)

Combat Expertise: This ability allows an NPC to sacrifice one or more secondary attack as part of a full attack action. Instead the NPC gains an extra attack per secondary attack which was sacrificed. The extra attacks are made at full attack bonus, but all of the NPC's attacks (including primary) are made at -2 per additional attack until his/her next turn.

Weapon Skill: This ability applies to all weapons which the Tank has Weapon Focus with. When wielded by a Tank, such weapons gain +2 attack at 2nd level plus another +1 per 4 levels. This bonus overlaps with that of Weapon Focus. At 2nd level such a weapon deals +1 damage, another +1 damage at 4th and a further +1 damage per 4 levels thereafter. In effect a 20th level Tank gets +6 attack and damage with his/her favored weapons.

These classes are purposely devoid of flavor, so that you can create whatever kind of flavor you need. The class abilities are simple, with as few creation choices as possible; no bonus feats or optional class abilities that players are so fond of. This is because NPCs don't advance in level, they just pop into existance when the storyline requires them; NPC classes don't need interesting progressions.

All NPC class abilities are there to make the DM's life simpler: the divine caster deals (or heals) 1d6 damage to all undead within 30' (will save of 10 + caster level + Cha bonus), instead of the wonky turning system of PHB that so many folks complain about. The Combat Finesse exists purely to elimate the necessity to roll 4 dice with 4 different attack bonuses. Both of the casters are spontaneous and lack Summon Familiar so the DM only need worry about Spells Known, without the headache of Spells Prepared and 'out of sight, out of mind' familiars.
