are there any rules for specializing in certain areas of a skill

EG someone with Profession (chef) might specialize in cooking a select type of dish (such as burgers/streaks, pasta, cakes or pizza) or using a select ingredient (such as beef or wine)

if there are no existing rules can anyone fill in the blanks for this

upon reaching X ranks in select skills and every Y ranks thereafter, a character may choose to specialize in a certain area of that skill, this gives a +Z circumstance bonus when using that area of the skill

My skill-based conversion works completely on that principle.

Each skill rank grants the owner a "proficiency slot" which they may learn a "trick" or specific area. MOST feats were rolled up into skills as "Proficiencies."

For example, this is the abbreviated listing for my "Armor" skill (replaces armor feats):

ARMOR
CON; COMBAT
You are proficient with wearing armor and shields.

UNTRAINED
If you are not proficient with armor you are wearing, or if you do not meet the required Strength (shields), you must apply the armor check penalty to all skill checks that involve moving, including Ride. Donning armor takes twice as long as shown in the 1-4 column of Table: Donning Armor if you are not proficient.

Anyone can wear a shield, but only those skilled may attempt to shield block or shield bash. Shield proficiency removes the non-proficiency penalties but only if you meet the required strength.

CHECK
Varies. When you wear armor, the armor check penalty for that armor applies only to Balance, Climb, Escape Artist, Hide, Jump, Move Silently, Pick Pocket, and Tumble checks. Higher ranks of Armor skill reduce your armor check penalty for these checks, provided that you are proficient with the type of armor you are wearing (see Table: Armor Check Penalty Reduction).

The following proficiencies are available for this skill:

*To fully utilize Armor skill, you must select one or more proficiencies. Each
category of armor is a separate proficiency, Light, Medium, and Heavy.

Category Type
Light Armor Padded, leather, studded leather, chain shirt.
Medium Armor Hide, scale mail, chainmail, breastplate.
Heavy Armor Splint mail, banded mail, half-plate, full plate, etc.
Shields Buckler, light shield, heavy shield.
Tower Shield Tower shield

Well, you could make a specific version of the Skill Focus feat, perhaps requiring Skill Focus as a prereq. Maybe it gives an additional +3 (stacking with Skill Focus), but only under certain circumstances.

Be careful about doing this though. Certain uses of a skill are more useful or popular than others. You probably don't want people specializing in long jumps, or Use-Magical-Device-wand-wielding, or Bluff-feinting. ;)
