I want to add a variant in my game where when you are hit, you get a -1 penality to everything for 1 round ( illustrate the pain ). If you ares hit more thant once in the same round, the penaliy adds up and reduce by 1 each turn.

OR
Gaining penalities after loosing some % of hp

This wound make every hit count until the creature dies cauz now even if you dealt lots of damage and the is 1 hp left, the ennemy can act as brand new.

help me with any coment PLEASE

If you want to keep your sanity, you will not use that first option. D&D has enough modifiers to keep track of without trying to remember whether Orc #7 was hit this round or last round. That looks like a surefire route for brain meltdown.

The 2nd option should be workable, but keep it simple. I suggest a flat -2 to all d20 rolls (purely mental rolls excepted, such as Knowledge checks) at 50% of your hp. Anything more complicated becomes hard to keep track of, especially with your total hp changing every level.

I know. I once played in a campaign (to 19th level) with wound penalties based on current percentage of total hp. They were constantly being forgotten, except when the GM said "Is that including your wound penalties?"

If you do this, creatures that are immune to critical hits should be immune to this as well, since the pain doesn't impair them as much.
