A character of mine was turned into a Vampire recently and undead creatures have no Constitution score. This is all hunkey dorey under normal rules, but we use the Vitality and Wound system. How many wounds does my newly killed character have?

Use your charisma score. Charisma replaces an undeads Con. score for most situations where a replacement is needed, such as for concentration checks for undead casters.

You only have woundpoints and have 1d12/hitdie.
You are afterall immune to crits and such.

The rules specifically state that you pretty much get the amount of hit points an undead creature would get in Wound points; furthermore, these points are removed from you as if you were using normal hit point rules for undead.

Yeah, as an undead you have no vitality points, and you have wound points equal to 1d12 per HD. An undead has no natural ability to negate damage; any damage they take is represented by physical damage. They are really really tough, though.
