Step 1. A generic NPC who acts suspicious around the PC's. (You don't have to have any paticular motivation for him--they will provide that when they say things like, "He must be a spy!" or "Maybe he's the one who stole my amulet last week.")

Step 2. The generic NPC leads the PCs to an appropriate place, based on their suspicions.

Step 3. The place is packed with CR-appropriate monsters straight from the MM with no changes.

Step 4. Fudge the monsters' hp (making it higher or lower) as needed to provide the appropriate challenge level. This is not as good as carefully planning the monsters' tactics and abilities, but it works.

Step 5. The generic PC or monster of your choice, when finally killed, has a sealed envelope on him. Take care of all the other treasure first (just roll for it on the tables in the DMG) and then leave the contents of the envelope as a cliffhanger for next time.
