I'm DM'ing for a good group. Sometimes, when I'm immersed in the game, I loose track of planned encounters and I wind up gyping the players out of some pretty good (or sometimes even pretty important) planned encounters.

How do I avoid that? I cant 'take it back after the session and re-play parts.

Well, without specifics, I have to be somewhat vague >.>

The key thing to remember here is if you forget to do something, the PCs don't know about it! NOTHING is set in stone until you tell it to the PCs. For instance, if you expected the PCs to find a key by going into some sewers, but they didn't even notice the sewers, you could simply place the key elsewhere!

Keep in mind this has a "ripple" effect through your plans, and you have to make sure you keep things consistent.

Flash cards help a lot.
Place the encounter with stats needed, and notes on combat strategies on front. Loot, XP, and hooks to next card on back. Numbering them helps too, just incase they get launched mid-session by over affectionate dog.

I write in a notebook (similar to the flashcards idea) and I think of the whole thing like a movie almost. I picture the drama of the scenes and it is easier to remember that way.
