Ok, my players, leave now.

Ok, in my campaign, one of the PCs in her backstory came to the area looking for her father and brother, who had gone missing.
They were both kidnapped and given to a group of Mind Flayers, they found out later are known as "The Three". They've rescued the father (he was pawned off to an ally of the flayers), but the brother has been turned into a Voidmind and is working as an assasin for the flayers.

Now, to the point of this post:
They've had the three described as "The eater of the mind, the eater of the body and the eater of the soul". My ideas being a normal Flayer (mind), a Vampiric Flayer (body) and a Soul-eater Ullithirid.
I've got 8 PCs, lvls 10-12, and I'm looking for a bit of advice on how to up the power of the creatures to actually be a challenge.

For the normal flayer I was thinking throw in a few of the servant-style abberations from LoM to fight with it, but the flayer itself still needs to really be upped to be a challenge, any ideas?

For the Vamp one, I was thinking give him a few lvls of Ranger, and have him attack the party with one or two others of his kind.

For the Soul-eater, well, he doesn't need upping really, I was just going to put him at the end of a series of caverns filled with creatures from LoM. They wont want to be going here for several more levels yet!

Any other ideas on what I can do to make things a fun challenge, yet not TPK?

"Mind"— I see lots of charming, illusions, compulsions, and thralls here. Maybe give him levels in psion or something, have him seem to be everywhere at once (Mirror Image, perhaps?) as the real one (Who is, of course, invisible) bombards the minds of the party with domination effects. And lots of thralls. Can't forget the delicious thralls.

"Body"— This may seem a bit strange, but think about giving the illithid a few levels of a fighting class, have him be a close combatant that focuses on getting close to the party so he can use a wonderful grapple modifier to deal some nice drainings (If you think it necessary, these classes may be considered non-associated with the creature, for 2 class levels per CR). Instead of other vampiric illithids, consider actual vampires, vampiric spawn or other corporeal undead.

"Soul"— Heh, one DM I play for has a Ulitharid (Or whatever) Soul Eater, using it as the boss of the party instead of a BBEG (Why, of course it's an evil campaign!).
Try some soul-related scrolls or such, like Trap the Soul or something to make the battle really iffy here, but I reckon you got this guy sussed.

Just a few suggestions.

Body: Fighter levels are good. Psiwarrior might be preferable is you are using psionics (Mind Flayers really love those psionics). Monk might be awesome as well (Grapple, Tentacle, Extract) and repeat.

Mind: Psionics really seem to work, but I suppose the basic Flayer could suffice. Still, it would be a little underpowered to a leveled up Body or Soul guy.

Soul: Easy... Deck him up with the Soul Eater PrC and have start level draining the party. I don't know what level everyone is, but the 1st level of Soul Eater gives him energy drain, so that's going to be plenty nasty.

mind: why not have him enter the minds of the pc's and litherally try to eat it, making the battle stand inside the mind of the PC's would be interesting

body: grapple is a good idea, consider the reaping mauler PrC from Complete Worrior

Soul: no ideas
